Gut-Lovin’ Berry Banana Bread Loaf
1 cup almond flour
1 cup self-raising flour
1/2 tsp baking powder
¼ cup LSA mix
2 ripe bananas, mashed (+ 1 extra for the top)
2 eggs
1/2 cup maple syrup
1/3 cup coconut oil, melted
1 tsp vanilla essence
1 cup mixed berries, fresh or frozen
Method:
- Preheat your oven to 170°C. Line a loaf tin with baking paper or lightly grease it with some coconut oil to ensure your banana bread doesn’t stick.
- In a large bowl, combine the almond flour, self-raising flour, baking powder, and LSA mix. Give it a good stir to ensure everything is well combined.
- In another bowl, mash your ripe bananas until creamy. Add the eggs, maple syrup, melted coconut oil, and vanilla essence. Whisk everything together until combined.
- Slowly add the wet mixture to the dry ingredients and mix until your batter forms.
- Fold in your mixed berries.
- Pour the batter into your prepared loaf tin. Slice the extra banana lengthwise and lay it on top of the batter. Top the loaf with a few extra berries too.
- Transfer to your oven and bake for about 50 minutes or until a skewer inserted into the centre comes out clean.
- Allow the Banana Bread to cool in the tin for about 10 minutes before transferring it to a wire rack to cool completely. Slice it up and enjoy with your favourite spread or simply on its own.
